From one kitchen to hotels across the country

The kitchen is located on the basement floor of the ROYAL PINES HOTEL URAWA, which houses eight authentic restaurants.
The baking team at pastry shop La Mora delivers a total of 26 types of bread to 11 hotels across the country (as of January 2026).

At 6am, the kitchen at La Mora gets up and running.
The unique feature of this shop's bread making is the long-term refrigerated fermentation process, in which the dough is shaped the day before and left to ferment in the refrigerator for 12 to 24 hours.
Slow fermentation brings out the flavor of the wheat and creates a chewy texture.
The homemade yeast starter is made from rye and has been passed down through the generations with wheat being added every day. Like the "added sauce" at a ramen shop, it contributes to the rich flavor of the bread.

Every morning, five to six staff members efficiently carry out the work of preparing, folding, shaping, and baking.
They produce bread to be sold to hotels across the country and bake bread to be sold at La Mora that day. Two large ovens are used to place the formed bread one after another, filling the kitchen with a fragrant aroma.

Chef Uchida's Challenge

The baking team is led by Chef Uchida Kensuke, chief boulanger at La Mora.
Chef Uchida values both efficiency and quality, and this originates from his experience training in Germany as a young man.

In his twenties, Chef Uchida learned how to make bread by working as a live-in employee at a bakery in a town in southern Germany. He says he was shocked by the work environment, where employees were not forced to work hard and delicious bread was made within a set time frame.
After returning to Japan, he was in charge of running several Maison Kayser stores, eventually becoming the production manager responsible for all stores.

In 2020, he joined Solare Hotels, inspired by the idea of "delivering delicious bread to the entire hotel group," and began creating a system to deliver bread made by "La Mora" to each hotel that previously used commercial bread.
By efficiently planning the bread-making process, they were able to ensure a stable supply without compromising on quality, which has enabled them to deliver delicious bread from their kitchen in Urawa to hotels across the country.

Bread made for hotels

Chef Uchida says, "I want people to think, 'If I stay at this hotel, I can eat that bread.'"
We also put effort into developing bread that is suited to each hotel.

For example, hotel androoms Nagoya Sakae developed a baguette for the special sandwiches served at the cafe on the first floor. Aiming for a crispy crust and a chewy center, they experimented with different doughs and fermentation times to create a baguette that is perfect for sandwiches filled with fillings.

DANSETSU SAPPORO offers white bread inspired by snow. It is made with Hokkaido concentrated yogurt and corn syrup, and has a subdued browning and a soft, sweet taste.
